This carrot cheesecake recipe is another addition to our restaurant recipes and is taken from the famous Cheesecake Factory restaurant. This cheesecake is entirely different from others as it is baked in layers of two different batters; cheesecake batter and carrot cake batter; to give its look like cheesecake it is then frost with delicious pineapple cheesecake frosting.

Ingredients:

For the cheesecake:

16 oz cream cheese (softened)
¾ cup granulated sugar
1 tbsp flour
3 egg
1 tsp vanilla

For Carrot Cake:

¾ cup vegetable oil
1 cup granulated sugar
2 egg
1 tsp vanilla
1 cup flour
1 tsp baking soda
1 tsp cinnamon
Pinch of salt
8½ oz crushed pineapple (well drained with juice reserved)
1 cup grated carrot
½ cup flaked coconut
½ cup chopped walnuts

For Frosting:

2 oz cream cheese (softened)
1 tbsp butter (softened)
1¾ cup powdered sugar
½ tsp vanilla
1 tbsp reserved pineapple juice
Pinch of salt

Procedure:

1. First prepare cheesecake, for that take a large bowl and beat together cream cheese and sugar until smooth.
2. Then beat in flour, eggs and vanilla to make smooth batter.
3. Now for carrot cake, in a separate bowl, beat together oil, sugar, eggs and vanilla.
4. Sift together dry ingredients for cake including flour, baking soda, cinnamon and salt, gradually add it to the egg mixture and mix well.
5. Then add drained pineapple, carrots, coconut and walnuts.
6. Now take a greased cake pan of suitable size and pour 1½ cup carrot cake batter onto the springform pan, then pour half of cream cheese batter over carrot cake batter and repeat the layer pattern with carrot and cheesecake batter with remaining batters. Make the top layer smooth using knife. Place the pan in preheated oven at 350 degrees F for about 65 mins. or until cake is baked well.
7. Meanwhile prepare frosting, for that you need to beat together cream cheese, butter, powdered sugar, vanilla, reserved pineapple juice and salt till become smooth and fluffy.
8. When the cake has been done, cool it to room temperature and then apply prepared frosting on top then refrigerate for 3 to 4 hours before serving.
