Preparation time : 30 mins. | Serves 2 persons
This Mexican Rice Recipe is prepared with chicken stock and vegetables in addition with tomato and cayenne flavor. Generally vegetables are not used in the preparation of Mexican rice but here are used these vegetables to give some extra flavor and nutritious.
1 ½ cup rice (soak in water fro an hour)
1 large onion (diced)
1 tbsp garlic (chopped)
1 ½ cups tomato puree
1 tbsp parsley (chopped)
1 cup mushrooms (sliced)
1 1/2 cups chopped mixed vegetables
1 small carrot (very thin julienne)
1 small capsicum (very thin julienne)
1/4 cabbage
1 cup boiled corns
1 tsp cumin powder
1 tsp coriander powder
2 cup chicken stock
Salt To taste
3 cayenne pepper
3 tbsp oil
Procedure:
1. In a deep sauce pan cook rice in oil for 4-5 mins until rice grains start to change their color from white to light yellow.
2. Now saute onion, vegetables and garlic with rice for 2-3 mins more.
3. After that add chicken stock, tomato puree, parsley, sliced mushrooms, salt, cumin and coriander. Stir the rice with the above ingredients and then cover the lid to cook it on high flame for 5-10 mins. until liquid starts to absorb in the rice.
4. Then add cayenne pepper and corns and simmer for further 10-15 mins.
