Sweet potato is a must for diabetics and should be included in diabetic diets as it is one of those healthy foods which is rich in fiber, protein, iron, vitamin and calcium and it also helps in stabilizing blood sugar level. Sweet potatoes are full of nutrition and are quick meals when it comes to easy cooking. The best way to cook sweet potatoes is to bake or roast them because in this way its natural taste is retained. Sweet potato fries are also very popular among youngsters and sweet potato dessert (kheer) is also very common is South Asian cuisine.
Ingredients:
1kg sweet potato
2 cups water
2/3 cup sugar (or 3 inch of jaggery/gurh)

Procedure:
1. Peel the sweet potato well and cut each of them into two large pieces.
2. In a deep pan, put the pieces of sweet potato, sugar and water. Turn on the stove and cook on high flame until water starts to boil, after that reduce the flame to minimum and cover the pan.
3. After 15-20 mins when all the water has been dried and sweet potato become soft completely, switch off the stove and let it cool at room temperature.

Sprinkle some mix spice (chart masala) and easy Sweet potato is ready to serve.
Note:
Its taste will increase by using jaggery (gurh/ brown sugar)
