This Tomato Florentine Soup recipe is a copycat of the famous Shoney restaurant. This recipe is not the exact one but the taste matches closely with the original one.
Ingredients:
28 oz clear chicken broth
14 oz stewed tomatoes
12 oz V-8 juice
10 oz cream of tomato soup
1 tbsp sugar
10 oz frozen chopped baby spinach
Dash of nutmeg
½ tsp red pepper flakes
Salt and pepper to taste
Procedure:
1. In a large heavy saucepan, combine broth, tomatoes, juice and soup and cook over medium heat. Stir constantly using whisk while cooking.
2. When the mixture gets boil, add spinach and all seasoning ingredients and simmer for about 20 mins. till spinach becomes soft.
3. Serve the hot Tomato Florentine Soup with your favorite bread.
