Chicken rezala is a very famous South Asian food where it is originated from state of Bengal. It is basically prepared with mutton but nowadays it can be prepared with chicken, beef, etc. The idea of the recipe is to serve the traditional meat curry with with lots of fried onion and aroma of rose water and saffron.
Ingredients:
½ kg chicken pieces with bones
1 cup full yogurt
1 onion (blended)
1 medium sized onion (thinly sliced)
6 green cardamom
1 cup water
¼ cup oil
2 cinnamon
Pinch of saffron (optional)
1 tsp cumin powder
1 tsp black peppercorns
1 tbsp red chili powder
½ tsp nutmeg and mace powder
½ tsp hot mix spice powder
½ tsp turmeric
2 tbsp ginger garlic paste
2 tbsp butter
Salt to taste
Procedure:
1. Heat oil in a saucepan, fry thinly sliced onions till become crisp crown, them remove from oil and let it cool.
2. In the same pan, fry chicken till become white then add ginger garlic paste, blended onion, green cardamom, whole black pepper and cinnamon and let it cook till fragrant.
3. Then add add yogurt, butter and spices including red chili, turmeric, hot mix spice, nutmeg and mace and cumin powder. Allow them to cook with 1 cup of water until chicken tender completely.
4. After that cook chicken on high flame till water gets dry and oil appears on the surface.
5. Take out the chicken rezala into the serving platter and top with crispy fried onion, and sprinkle some rose water.
