This Salmon Croquettes Recipe is prepared with some veggies like bell pepper and spring onion. You may add more veggies of your choice like potatoes could also be the good choice for making these croquettes.
Ingredients:
For Croquettes:
2 tbsp cup low fat mayonnaise
2 tsp fresh lemon juice
1½ tsp Dijon mustard
¼ cup green onions (finely chopped)
2 tbsp red bell pepper (minced)
1 tsp garlic powder
¼ tsp salt
Pinch of ground red pepper
12 oz skinless and boneless pink salmon
1 large egg (lightly beaten)
1 cup panko (Japanese breadcrumbs)
For Dip:
1 tbsp canola oil
1 tbsp fresh parsley (chopped)
½ tsp garlic (minced)
Pinch of salt
2 tbsp cup low fat mayonnaise
2 tsp fresh lemon juice
1 tsp Dijon mustard
Procedure:
1. Take a large mixing bowl and combine all ingredients except panko using fork so that every ingredient incorporate well.
2. Then gradually add panko and softly mix it with the salmon mixture. If you feel that the of batter is enough for making patties easily, then start making patties of medium sizes (around size of your palm).
3. Heat oil in the frying pan for shallow frying, fry prepared patties in batches till become golden brown from both sides.
4. After that prepare dip for the croquettes, combine ingredients for the dip and mix well.
5. Serve the hot salmon croquettes with the prepared dip.
