This mix vegetable pickle recipe is from South Asian cuisine and is very much popular in India and Pakistan. The vegetables used in this pickle are mainly available during winter season but can also be prepared with frozen vegetables. Though its preparation time is not so long but it takes time up to a week in building up the taste so that all flavors absorbs well in the vegetables.
Ingredients:
1/2 kg turnip (cut into strips)
1/2 kg carrot9cut into strips)
10-15 green chilies
2 tbsp ground mustard
1/2 tbsp red pepper powder
1/2 tbsp crushed red pepper
1/2 tsp turmeric powder
Salt to taste
1 tbsp white vinegar
1 tbsp carum
1 tbsp nigella
250 gm mustard oil
Procedure:
1. Boil carrots and turnips in water for 5-8 mins so that they become half done.
2. Now take a steel mixing bowl and mix all the ingredients together including boiled vegetables, green chilies and spices.
3. After that take jar of either glass or plastic and put the marinated vegetables in it. Place this jar near a window or best at roof so that it may directly exposes in sunlight. Leave this jar as it is for at least a week. After that when its taste become sour then its ready to serve.
Note: If jar is exposed in moisture area then it will be spoiled.
