This Jamaican rice recipe is curried rice which is prepared with lots of healthy ingredients including veggies, pineapple, black beans and cashews. This healthy rice recipe has some sour flavor due to lime juice and curry powder makes this rice tasty. You can add some other seasonal veggies to this rice to make it more healthy and nutritious food.
Ingredients:
2 tsp olive oil
1/2 cup diced red bell pepper
1/2 cup diced yellow pepper
1/2 cup sliced green onions
2 tbsp curry powder
3 cup hot cooked rice
1/4 cup Equal sweetener
2 tbsp lime juice
1/2 tsp salt
20 oz pineapple chunks (drained)
15 oz black beans (rinsed and drained)
1/2 cup salted cashews
Procedure:
1. Saute bell pepper and onion in oil for 2 to 3
min.
2. Add curry powder and cook on high heat for just few min so that flavor of curry powder mix well with the veggies.
3. In a large mixing bowl combine cooked rice , Equal, lime juice and salt.
4. Add cooked vegetable mixture , pineapple and black beans in the rice mixture. Delicious Jamaican rice is ready to serve.
