Preparation time : 40 min. | Serves 8 persons
This Chicken Mac and Cheese recipe is prepared mainly with Cajun seasoning. In this recipe penne pasta is used which you can be replaced by any kind of pasta of your own choice. Adding veggies like bell pepper makes this dish more delicious and colorful.
Ingredients:
8 oz cooked penne pasta
For Chicken:
1 lb chicken breast (boneless and cut into strips)
2 tsp Cajun seasoning
Salt and pepper to taste
1 tbsp olive oil
For Sauce:
1 medium onion chopped
2 cloves garlic (minced)
3 tbsp butter
3 tbsp all-purpose flour
2 tbsp tomato paste
3 cup milk
1 tsp Cajun seasoning
2 cup smoked cheddar cheese (shredded)
Salt and pepper to taste
For Topping:
2 cup bread crumbs
½ cup Parmesan cheese (grated)
3 tbsp butter (melted)
Procedure:
1. Preheat oven to 350 degree F.
2. Heat oil in a large skillet, add chicken and cook with Cajun seasoning and salt and pepper until become light brown in color and then remove form pan.
3. Now in the same skillet cook onion and garlic in butter until become soft.
4. Add flour and mix well until pleasant roasted smell starts to come.
5. Then add tomato paste, milk, cheese, salt and pepper and cook on medium heat until sauce gets thick and starts bubbling.
6. Now mix all the prepared items together including chicken, sauce and pasta and put this mixture into the casserole dish.
7. Prepare crumbs mixture for topping for that combine bread crumbs, parmesan cheese and butter to make smooth crumbs and then sprinkle it over the pasta mixture.
8. Bake the chicken mac and cheese for just 15-20 min until crumbs topping turns into light golden in color.
